TACO SOUP
1 pound ground beef
28 oz can diced tomatoes
15 ½ oz can pinto beans or kidney beans
15 ½ oz can whole kernel corn
Packet of taco seasoning mix
Cook ground beef in Bean Pot in microwave 6 minutes, drain/crumble
Add undrained canned goods and packet of taco seasoning. Mix and microwave additional 15-20 minutes. Top with grated cheese, salsa and tortilla chips.
CHICKEN AND VEGETABLES
Place chicken (skin on or off) in Bean Pot. Add chopped onions, celery and carrots on top of chicken. Sprinkle with 1/2 pkg. of Good Season’s Italian Dressing mix. Cover and bake for 1 hour at 350 degrees.
PORK CHOPS & GRAVY
Place pork chops in Bean Pot. Mix one can cream of mushroom soup with 1/4 cup water and 2 cloves pressed garlic. Cover chops with soup mixture. Cover and bake for 1-1/2 hours at 375 degrees.
BBQ BONELESS PORK RIBS
5 Tbls dark brown sugar ½ Tbls vinegar
1 ½ cup ketchup 1 ½ tsp liquid hickory smoke seasoning
3 ½ lb boneless pork ribs, salt & peppered
Mix sugar, vinegar, ketchup & hickory in bowl. Put ribs in Bean Pot and pour half of mixture over ribs, stirring to coat evenly. Bake for 3 ½ hours at 325 degrees. Drain sauce and grease, pour reserved BBQ sauce over ribs and bake another 15 minutes at 350.
CHICKEN ENCHILADA CASSEROLE
Salt & pepper chicken and microwave in beanpot, 6-8 min thawed, 15-18 if frozen, shred and add 2 cans cream of mushroom soup, 1 sm can Ortega diced chiles, ½ cup milk, shredded cheese and tortilla chips. Mix and microwave an additional 15 minutes.
COCKTAIL MEATBALLS
12 oz lean ground beef ½ cup oatmeal 1 med chili sauce
¼ cup chopped onion 1 egg 1 sm jar grape jelly
¼ tsp salt ¼ tsp pepper
Preheat over 350. In large bowl, mix beef, oatmeal, onion, salt, pepper & egg. Roll mixture in balls. Place in BeanPot and place in oven 30 minutes. Add chili sauce and grape jelly. Bake another 30 minutes or until meatballs are done.
DEEP PIT BEEF
Place the roast in the Bean Pot. Sprinkle a packet of Lawry’s Sloppy Joe Mix on top. It isn’t necessary to add water. Cover and bake in oven for 4-5 hours at 250 degrees.
Shredded Beef Tacos: substitute with Taco Seasoning.
BACHELOR’S ROAST
Place roast (about 3 lbs.) in Bean Pot and pour 1 can of coke and 2 cups of catsup over it. Cover and cook for about 30 minutes/lb. in a 325 degree oven. Optional: Add onions and pressed garlic. If there are any leftovers just shred and mix with the sauce and you have BBQ for a couple of meals.
PORK ROAST
Place in Bean Pot. Season to taste, adding vegetables, etc.
OR cover with Italian Dressing. Bake at 250 degrees for 3 hours.
WHITE BEANS
Rinse one small package of white beans, add to beanpot a giant can of chicken broth and a hamhock. Cook covered at 300 degrees for
3 hours. Salt & pepper to taste. No need to presoak beans.
APPLESAUCE (YUMMY!) If you like applesauce, this is a winner!
8 Apples (2 of 4 different varieties), peel - core - cutup. Put in Bean Pot, add ¾ C water, ¾ C sugar, tsp cinnamon. Cover with lid and bake at 250 degrees overnight (or approx 8-9 hours). Serve over pancakes (use the juice for liquid in pancakes), serve over ice cream, serve as a side dish.
